Meatball "Gyro" Lettuce Wraps
Garlic-Za'atar Sweet Potato Fries
Ingredients
- 8 oz uncooked gluten-free chicken meatballs, halved (such as Murray's)
- 4 romaine lettuce leaves
- ½ seedless cucumber, sliced
- 1 tomato, sliced
- ¼ cup thinly sliced red onion
- ¼ cup refrigerated tzatziki-Ranch Greek yogurt dressing (such as Litehouse)
- 3 Tbsp crumbled feta cheese
Instructions
- Preheat oven to 450°F. Line a rimmed baking sheet with foil; place a greased wire rack over foil. Place meatballs on rack. Bake 15 minutes or until browned and done.
- Arrange lettuce in 2 stacks; top with meatballs, cucumber, tomato, onion, dressing, and cheese.

- 6 oz gluten-free sweet potato fries (about 24 fries; such as Alexia)
- 2 Tbsp olive oil
- 2 cloves garlic
- 1 tsp Za'atar seasoning
- ½ tsp kosher salt
Side Dish Instructions
- Combine all ingredients on a baking sheet; spread in a single layer.
- Bake fries according to package directions.
