Meatball "Gyro" Lettuce Wraps

Ingredients

  • 8 oz uncooked gluten-free chicken meatballs, halved (such as Murray's)
  • 4 romaine lettuce leaves
  • ½ seedless cucumber, sliced
  • 1 tomato, sliced
  • ¼ cup thinly sliced red onion
  • ¼ cup refrigerated tzatziki-Ranch Greek yogurt dressing (such as Litehouse)
  • 3 Tbsp crumbled feta cheese

Instructions

  1. Preheat oven to 450°F. Line a rimmed baking sheet with foil; place a greased wire rack over foil. Place meatballs on rack. Bake 15 minutes or until browned and done.
  2. Arrange lettuce in 2 stacks; top with meatballs, cucumber, tomato, onion, dressing, and cheese.

Side Dish Ingredients

  • 6 oz gluten-free sweet potato fries (about 24 fries; such as Alexia)
  • 2 Tbsp olive oil
  • 2 cloves garlic
  • 1 tsp Za'atar seasoning 
  • ½ tsp kosher salt

Side Dish Instructions

  1. Combine all ingredients on a baking sheet; spread in a single layer.
  2. Bake fries according to package directions.
