Meatball Subs on a Stick
Potato Tot Bombs and Carrots
Ingredients
- 1 (13.8-oz) can refrigerated pizza dough
- 2 Tbsp butter, melted
- 1 tsp Italian seasoning
- 12 long wooden skewers
- 1 (28-oz) pkg frozen Italian-style meatballs, thawed
- 1 (24-oz) jar pasta sauce, heated
Instructions
- Preheat oven to 375°F; line a baking sheet with foil, and lightly grease the foil.
- Unroll dough, and cut into ½-inch thick strips; brush with melted butter, and sprinkle with seasoning.
- Thread dough strips on each skewer alternately with 4 meatballs; place on prepared pan.
- Bake 10 minutes or until bread is golden brown. Serve with warm pasta sauce Sprinkle with some shredded mozzarella cheese, if desired.
Side Dish Ingredients
- 1 (32-oz) pkg frozen potato tots, thawed
- 1 (8-oz) pkg sliced Monterey Jack cheese with peppers, cut into ¼-inch strips the length of potato tots
- 1 (16-oz) pkg thin sliced bacon
- 1 cup packed brown sugar
- ½ tsp pepper
- 4 carrots, cut into sticks
Side Dish Instructions
- Preheat oven to 375°F; line a baking sheet with foil. Place a wire rack over foil.
- Place 1 slice cheese on each potato tot. Cut each piece of bacon into thirds, and wrap bacon around tot and cheese.
- Stir together brown sugar and pepper in a small bowl. Roll tots in mixture.
- Place tots, seam side down, on wire rack; bake 20 minutes or until bacon is crisp.
- Serve carrot sticks alongside meatball subs.
