Chicken, Broccoli, and Basil Stir-Fry
Hot Soba Noodles with PeanutsIngredients
- 1½ lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 Tbsp sesame oil
- 1 (12-oz) pkg broccoli florets
- 1 (10-oz) pkg matchstick-cut carrots
- 1 Tbsp jarred minced garlic
- ½ cup sweet chili sauce
- ¼ cup low-sodium soy sauce
- ½ cup thinly sliced fresh basil
Instructions
- Cook chicken in hot oil in a large skillet over medium heat until browned.
- Stir in broccoli, carrots, and garlic; cook, stirring constantly, 3 to 4 minutes. Stir in chili sauce and soy sauce; cook 3 minutes. Stir in basil.
Side Dish Ingredients
- 1 (8-oz) pkg soba noodles
- 4 green onions, chopped
- ½ cup chopped dry roasted, lightly salted peanuts
Side Dish Instructions
- Cook soba noodles according to package directions. Toss with green onions and nuts.
