Mexican Mole Chili
Garlic Cornbread CroutonsIngredients
- 1½ lb lean ground beef
- 1 (8-oz) pkg diced onions
- 3 Tbsp jarred minced garlic
- 2 (14.5-oz) cans zesty chili-style diced tomatoes (such as Del Monte)
- 1 (12-oz) bottle dark beer
- 1 oz semisweet chocolate, chopped
- 3 Tbsp Mexican seasoning (such as McCormick)
- ½ cup reduced-fat sour cream
Instructions
- Cook beef, onion, and garlic in a Dutch oven over medium-high heat 5 minutes or until beef is browned and crumbly.
- Add tomatoes, beer, chocolate, and seasoning; reduce heat, and simmer 10 minutes, stirring until chocolate is melted. Serve with sour cream.

- 1 (6-oz) loaf bakery cornbread, cut into large cubes
- 2 Tbsp butter, melted
- 2 tsp jarred minced garlic
Side Dish Instructions
- Preheat oven to 400°F. Toss together all ingredients in a bowl. Arrange in a single layer on a rimmed baking sheet. Bake 10 minutes or until golden, stirring once.
