Jerk Pork Tenderloin with Mango Salsa

Ingredients

  • 2 lb pork tenderloin
  • 1½ Tbsp all-natural, sugar-free Jerk seasoning
  • 1 tsp salt, divided
  • 1 tsp pepper, divided
  • 2 Tbsp olive oil
  • 1 (10-oz) pkg diced mangos
  • 1 red bell pepper, minced
  • 1 jalapeño pepper, seeded and minced
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp fresh lime juice

Instructions

  1. Preheat oven to 425°F. Rub pork with Jerk seasoning and ½ tsp each salt and pepper. Cook in hot oil in a large cast-iron or ovenproof skillet over medium-high heat 5 minutes or until browned on all sides.
  2. Transfer skillet to oven, and bake 12 to 15 minutes or until pork is done; let stand 5 minutes before slicing.
  3. Meanwhile, toss together mango, bell pepper, jalapeño, cilantro, lime juice, and ½ tsp each salt and pepper. Serve salsa over pork.

Side Dish Ingredients

  • 2  (16-oz) pkg peeled, cubed sweet potatoes
  • 2 Tbsp ghee (see Note)
  • 2 Tbsp chopped fresh cilantro
  • ½ tsp ground cinnamon
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a large saucepan; reduce heat, and simmer 10 minutes or until tender.
  2. Drain potatoes well, and return to pan. Add ghee, cilantro, cinnamon, salt, and pepper.
  3. Mash with a potato masher to desired consistency. Season with salt and pepper to taste.
