Jerk Pork Tenderloin with Mango Salsa
Cinnamon Mashed Sweet Potatoes
Ingredients
- 2 lb pork tenderloin
- 1½ Tbsp all-natural, sugar-free Jerk seasoning
- 1 tsp salt, divided
- 1 tsp pepper, divided
- 2 Tbsp olive oil
- 1 (10-oz) pkg diced mangos
- 1 red bell pepper, minced
- 1 jalapeño pepper, seeded and minced
- ¼ cup chopped fresh cilantro
- 2 Tbsp fresh lime juice
Instructions
- Preheat oven to 425°F. Rub pork with Jerk seasoning and ½ tsp each salt and pepper. Cook in hot oil in a large cast-iron or ovenproof skillet over medium-high heat 5 minutes or until browned on all sides.
- Transfer skillet to oven, and bake 12 to 15 minutes or until pork is done; let stand 5 minutes before slicing.
- Meanwhile, toss together mango, bell pepper, jalapeño, cilantro, lime juice, and ½ tsp each salt and pepper. Serve salsa over pork.
Side Dish Ingredients
- 2 (16-oz) pkg peeled, cubed sweet potatoes
- 2 Tbsp ghee (see Note)
- 2 Tbsp chopped fresh cilantro
- ½ tsp ground cinnamon
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a large saucepan; reduce heat, and simmer 10 minutes or until tender.
- Drain potatoes well, and return to pan. Add ghee, cilantro, cinnamon, salt, and pepper.
- Mash with a potato masher to desired consistency. Season with salt and pepper to taste.
