Cider-Glazed Pork Chops and Apple
Shaved Brussels Sprouts Salad
Ingredients
- 2 (6-oz) center-cut pork chops
- ¼ tsp salt
- ¼ tsp pepper
- 2 tsp butter, divided
- 1 Honeycrisp apple, cored and sliced (or use Fuji apple)
- ½ (6-oz) pkg sliced onions
- 1 Tbsp jarred minced garlic
- ¼ cup apple cider (such as Knudsen)
- ¾ tsp Dijon mustard
- 1 Tbsp chopped fresh rosemary
Instructions
- Sprinkle pork with salt and pepper. Melt 1 tsp butter in a skillet over medium-high heat; add pork, and cook 3 minutes per side or until browned. Remove from skillet.
- Melt 1 tsp butter in skillet; add apple, onion, and garlic. Cook 3 minutes or until crisp-tender.
- Add cider, mustard, and rosemary to skillet, scraping to loosen browned bits; return pork to skillet. Cook 5 to 6 minutes or until thickened.
Side Dish Ingredients
- ½ lemon
- 2 Tbsp extra virgin olive oil
- ¼ tsp kosher salt
- ¼ tsp pepper
- 2 cups shaved Brussels sprouts (such as Eat Smart)
- 3 Tbsp pomegranate seeds (arils)
- 2 Tbsp shaved Parmesan cheese
Side Dish Instructions
- Grate zest and squeeze juice from lemon. Whisk together lemon juice, zest, oil, salt, and pepper.
- Combine Brussels sprouts and pomegranate seeds in a bowl. Drizzle with dressing; toss. Sprinkle with cheese.
