Cider-Glazed Pork Chops and Apple

Ingredients

  • 2 (6-oz) center-cut pork chops
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 tsp butter, divided
  • 1 Honeycrisp apple, cored and sliced (or use Fuji apple)
  • ½ (6-oz) pkg sliced onions 
  • 1 Tbsp jarred minced garlic
  • ¼ cup apple cider (such as Knudsen)
  • ¾ tsp Dijon mustard
  • 1 Tbsp chopped fresh rosemary

Instructions

  1. Sprinkle pork with salt and pepper. Melt 1 tsp butter in a skillet over medium-high heat; add pork, and cook 3 minutes per side or until browned. Remove from skillet.
  2. Melt 1 tsp butter in skillet; add apple, onion, and garlic. Cook 3 minutes or until crisp-tender.
  3. Add cider, mustard, and rosemary to skillet, scraping to loosen browned bits; return pork to skillet. Cook 5 to 6 minutes or until thickened.

Side Dish Ingredients

  • ½ lemon
  • 2 Tbsp extra virgin olive oil
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 2 cups shaved Brussels sprouts (such as Eat Smart)
  • 3 Tbsp pomegranate seeds (arils)
  • 2 Tbsp shaved Parmesan cheese

Side Dish Instructions

  1. Grate zest and squeeze juice from lemon. Whisk together lemon juice, zest, oil, salt, and pepper.
  2. Combine Brussels sprouts and pomegranate seeds in a bowl. Drizzle with dressing; toss. Sprinkle with cheese.
