Ranch Chicken-Potato Casserole

Ingredients

  • ¾ lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 Tbsp butter
  • 1 (10.75-oz) can cream of chicken soup
  • ½ cup sour cream
  • 1 cup shredded colby-Jack cheese
  • 1 (2.5-oz) pouch real bacon pieces
  • ½ (1-oz) envelope Ranch dressing mix
  • ½ (32-oz) pkg frozen cubed hash browns, thawed

Instructions

  1. Preheat oven to 350°F.
  2. Lightly season chicken with salt and pepper.
  3. Melt butter in a nonstick skillet over medium-high heat. Add chicken, and cook, stirring 6 minutes or until chicken is done. Spoon chicken into a large bowl.
  4. Stir in soup, sour cream, cheese, bacon, and dressing mix. Add potatoes, stirring to combine. Spoon into a greased 9-inch baking dish.
  5. Bake 35 to 40 minutes or until bubbly.

  • ½ (16-oz) pkg frozen green beans
  • ½ Tbsp olive oil

Side Dish Instructions

  1. Prepare green beans according to package directions; toss with oil and salt and pepper to taste.
