Grilled Bacon-and-Blue Burgers
Corn on the Cob with Chili Butter
Ingredients
- 2 lb lean ground beef
- ½ cup crumbled blue cheese
- 2 red onions, cut into ¼-inch-thick slices
- 2 Tbsp olive oil
- 6 Tbsp mustard-mayonnaise blend
- 6 frozen gluten-free hamburger buns, thawed
- 6 slices bacon, cooked and broken in half
- 3 cups baby arugula-spinach mix (or use arugula)
Instructions
- Preheat grill to medium-high heat. Gently combine beef, cheese, and desired amount of salt and pepper; shape into 6 patties. Brush onion with oil.
- Grill burgers, covered, 4 to 5 minutes per side or until centers are no longer pink. Grill onions 2 minutes per side.
- Spread mustard-mayonnaise onto buns. Serve burgers, bacon, onions, and arugula on buns.
Side Dish Ingredients
- 6 ears corn
- 3 Tbsp butter, softened
- 1 tsp chili powder
- ½ tsp kosher salt
- 1 green onion, chopped
Side Dish Instructions
- Bring corn and salted water to cover to a boil; boil 10 to 15 minutes or until tender. Drain.
- Stir together butter, chili powder, salt, and green onion. Spread butter on hot corn.
