Beefy Cabbage Rolls
Apple-Pear Salad
Ingredients
- 12 large green cabbage leaves
- 1¾ lb grass-fed ground beef
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp coconut oil, divided
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 Tbsp chopped fresh sage
Instructions
- Steam cabbage in a steamer basket over boiling water 5 minutes or until tender.
- Sprinkle beef with salt and pepper. Melt 1 Tbsp hot oil in a large skillet; add beef, and cook 5 minutes or until browned and crumbly. Drain.
- Add 2 Tbsp oil, onion, garlic, and sage to skillet. Cook 6 minutes or until onion is tender; stir in beef. Spoon mixture down center of each cabbage leaf.
- Roll up cabbage leaves, and place, seam sides down, on a platter.
Side Dish Ingredients
- ¼ cup fresh orange juice
- 3 Tbsp extra virgin olive oil
- 1 Tbsp balsamic vinegar
- 3 apples, cored and sliced (such as Gala)
- 3 pears, cored and sliced (such as Bartlett)
Side Dish Instructions
- Whisk together orange juice, oil, and vinegar in a bowl. Add apples and pears; toss.
