Beefy Cabbage Rolls

Ingredients

  • 12 large green cabbage leaves
  • 1¾ lb grass-fed ground beef
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp coconut oil, divided
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 Tbsp chopped fresh sage

Instructions

  1. Steam cabbage in a steamer basket over boiling water 5 minutes or until tender.
  2. Sprinkle beef with salt and pepper. Melt 1 Tbsp hot oil in a large skillet; add beef, and cook 5 minutes or until browned and crumbly. Drain.
  3. Add 2 Tbsp oil, onion, garlic, and sage to skillet. Cook 6 minutes or until onion is tender; stir in beef. Spoon mixture down center of each cabbage leaf.
  4. Roll up cabbage leaves, and place, seam sides down, on a platter.

Side Dish Ingredients

  • ¼ cup fresh orange juice
  • 3 Tbsp extra virgin olive oil
  • 1 Tbsp balsamic vinegar
  • 3 apples, cored and sliced (such as Gala)
  • 3 pears, cored and sliced (such as Bartlett)

Side Dish Instructions

  1. Whisk together orange juice, oil, and vinegar in a bowl. Add apples and pears; toss.
