Sheet Pan Chicken Marinara with Zoodles
Ingredients
- 2 chicken cutlets (about ¾ lb)
- 1 pint grape tomatoes
- 2 Tbsp olive oil, divided
- 2 Tbsp jarred minced garlic, divided
- ¼ tsp kosher salt, divided
- ¼ tsp pepper
- ½ cup all-natural marinara sauce (such as Rao's)
- 1 (1-oz) slice fresh mozzarella cheese, halved
- ½ (16-oz) pkg zucchini spirals
- 1 Tbsp small fresh basil leaves
Instructions
- Preheat oven to 425°F. Toss together chicken, tomatoes, 1 Tbsp oil, 1 Tbsp garlic, and ⅛ tsp each salt and pepper. Place chicken and tomatoes in center of a large rimmed baking sheet.
- Bake 15 minutes. Spoon marinara sauce over chicken; top with cheese.
- Combine zucchini, 1 Tbsp oil, 1 Tbsp garlic, and ⅛ tsp each salt and pepper in a bowl. Arrange zucchini mixture around chicken.
- Bake 5 minutes longer or until cheese is melted and chicken is done. Top with basil.
