Sheet Pan Chicken Marinara with Zoodles

Ingredients

  • 2 chicken cutlets (about ¾ lb)
  • 1 pint grape tomatoes
  • 2 Tbsp olive oil, divided
  • 2 Tbsp jarred minced garlic, divided
  • ¼ tsp kosher salt, divided
  • ¼ tsp pepper
  • ½ cup all-natural marinara sauce (such as Rao's)
  • 1 (1-oz) slice fresh mozzarella cheese, halved
  • ½ (16-oz) pkg zucchini spirals
  • 1 Tbsp small fresh basil leaves

Instructions

  1. Preheat oven to 425°F. Toss together chicken, tomatoes, 1 Tbsp oil, 1 Tbsp garlic, and ⅛ tsp each salt and pepper. Place chicken and tomatoes in center of a large rimmed baking sheet.
  2. Bake 15 minutes. Spoon marinara sauce over chicken; top with cheese.
  3. Combine zucchini, 1 Tbsp oil, 1 Tbsp garlic, and ⅛ tsp each salt and pepper in a bowl. Arrange zucchini mixture around chicken.
  4. Bake 5 minutes longer or until cheese is melted and chicken is done. Top with basil.
