Pork Chops with Pear, Blue Cheese, and Balsamic Glaze

Ingredients

  • 2 (6-oz) boneless center-cut loin pork chops
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • 1 firm, ripe red pear, peeled and sliced
  • ⅓ cup sliced onion
  • 1 Tbsp jarred minced garlic
  • 1 tsp chopped fresh rosemary (or use dried)
  • 1 Tbsp balsamic glaze
  • 3 Tbsp crumbled blue cheese

Instructions

  1. Sprinkle pork with salt and pepper. Cook in hot oil over medium-high heat 4 to 5 minutes per side or until browned and done. Remove from skillet, and keep warm.
  2. Add pear, onion, garlic, and rosemary to skillet; sauté 5 to 6 minutes or until pear and onion are tender.
  3. Serve pear mixture over pork; drizzle with balsamic glaze, and sprinkle with cheese.

  • 1 (8-oz) pkg thin green beans
  • 1 Tbsp olive oil
  • ½ small shallot, minced
  • 1 Tbsp chopped fresh parsley
  • ½ tsp lemon zest
  • 1 Tbsp butter, softened
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Toss beans with oil in a roasting pan. Bake 6 to 8 minutes.
  2. Meanwhile, stir together shallot, parsley, lemon zest, and butter; toss with hot cooked beans. Sprinkle with salt and pepper.
