Shrimp Naan Pizzas with Caesar Salad

Ingredients

  • 1 (8.8-oz) pkg whole-grain naan
  • 1 Tbsp olive oil
  • ½ clove garlic
  • ¾ cup shredded part-skim mozzarella cheese
  • ¾ lb peeled and deveined, large wild-caught raw shrimp
  • ⅛ tsp dried oregano
  • 1 cup grape tomatoes
  • 1 (7.5-oz) pkg Caesar salad kit with Greek yogurt dressing (such as Fresh Express)
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 450°F. Brush tops of naan with oil. Bake on a baking sheet coated with cooking spray 6 to 8 minutes or until browned.
  2. Remove naan from oven; rub with cut sides of garlic. Top with cheese and shrimp; sprinkle with oregano.
  3. Bake 5 to 6 minutes or until cheese is melted and shrimp turn pink.
  4. Meanwhile, toss together tomatoes and all salad kit ingredients.
  5. Cut pizzas into wedges, and sprinkle with pepper. Serve salad with pizzas.
