Pappardelle with Creamy Mushrooms
Roasted Tomatoes with ArugulaIngredients
- 3 oz pappardelle pasta
- 1½ Tbsp butter
- 1 (8-oz) pkg sliced portobello mushrooms
- ½ cup diced onion
- 1 Tbsp all-purpose flour
- ⅔ cup 2% reduced-fat milk
- 1 Tbsp dry sherry
- ¼ tsp salt
- ¼ tsp pepper
- 3 Tbsp crème fraîche (or use sour cream)
Instructions
- Cook pasta according to package directions.
- Melt butter in a large skillet over medium-high heat. Add mushrooms and onion; cook 10 minutes or until browned, stirring occasionally.
- Add flour; cook, stirring constantly, 2 minutes. Gradually stir in milk, sherry, salt, and pepper. Cook, stirring constantly, 3 to 5 minutes or until slightly thickened.
- Add crème fraîche; stir until blended. Toss sauce with pasta before serving.

- 1 lb Roma tomatoes, halved lengthwise
- 1½ Tbsp olive oil
- ⅛ tsp salt
- ¼ tsp pepper
- 1 (5-oz) pkg baby arugula
Side Dish Instructions
- Preheat oven to 475°F. Drizzle tomatoes with oil on a rimmed baking sheet; arrange in a single layer. Bake 20 to 25 minutes.
- Sprinkle tomatoes with salt and pepper. Place in a bowl; add arugula, and toss gently until slightly wilted.
