Chicken-Whole Grain Tabbouleh

Ingredients

  • 2 (8.5-oz) pouches microwavable seven whole-grains mix (such as Seeds of Change)
  • 3 cups shredded rotisserie chicken (without skin)
  • 2 pints multicolored tomatoes, halved
  • 1 seedless cucumber, diced
  • ½ cup chopped fresh mint
  • ¼ cup chopped fresh flat-leaf parsley
  • ½ cup refrigerated olive oil vinaigrette (such as Marzetti)
  • 2 Tbsp fresh lemon juice
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Cook whole-grain mix according to package directions; place in a large bowl.
  2. Add chicken, tomatoes, cucumber, mint, parsley, vinaigrette, lemon juice, salt, and pepper; toss.

Side Dish Ingredients

  • 1 cantaloupe, halved
  • ½ tsp kosher salt
  • 1 tsp cayenne pepper
  • 2 Tbsp honey
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp extra virgin olive oil
  • ½ (4-oz) pkg crumbled feta cheese

Side Dish Instructions

  1. Peel cantaloupe, and cut into 12 wedges. Sprinkle with salt and cayenne pepper.
  2. Combine honey, lemon juice, and oil; drizzle over cantaloupe. Sprinkle with cheese.
