Chicken-Whole Grain Tabbouleh
Cantaloupe with FetaIngredients
- 2 (8.5-oz) pouches microwavable seven whole-grains mix (such as Seeds of Change)
- 3 cups shredded rotisserie chicken (without skin)
- 2 pints multicolored tomatoes, halved
- 1 seedless cucumber, diced
- ½ cup chopped fresh mint
- ¼ cup chopped fresh flat-leaf parsley
- ½ cup refrigerated olive oil vinaigrette (such as Marzetti)
- 2 Tbsp fresh lemon juice
- ½ tsp salt
- ½ tsp pepper
Instructions
- Cook whole-grain mix according to package directions; place in a large bowl.
- Add chicken, tomatoes, cucumber, mint, parsley, vinaigrette, lemon juice, salt, and pepper; toss.
Side Dish Ingredients
- 1 cantaloupe, halved
- ½ tsp kosher salt
- 1 tsp cayenne pepper
- 2 Tbsp honey
- 1 Tbsp fresh lemon juice
- 1 Tbsp extra virgin olive oil
- ½ (4-oz) pkg crumbled feta cheese
Side Dish Instructions
- Peel cantaloupe, and cut into 12 wedges. Sprinkle with salt and cayenne pepper.
- Combine honey, lemon juice, and oil; drizzle over cantaloupe. Sprinkle with cheese.
