Mini Meat Loaves
Roasted Vegetable Medley
Ingredients
- 1 cup frozen seasoning blend (diced onion, bell peppers, and celery)
- 1 clove garlic, minced
- ⅓ cup ketchup, divided
- ¾ cup whole wheat breadcrumbs
- 1 Tbsp Italian seasoning
- 1 tsp salt
- 1 tsp pepper
- 2 large eggs, lightly beaten
- 1½ lb ground beef
Instructions
- Preheat oven to 450°F. Microwave seasoning blend at HIGH 2 minutes or until tender.
- Stir in garlic, 1 Tbsp ketchup, breadcrumbs, seasoning, salt, pepper, and eggs; add beef, and gently combine.
- Shape mixture into 6 small meat loaves. Place on a wire rack over a foil-lined rimmed baking sheet; top with remaining ketchup.
- Bake 20 minutes or until centers are no longer pink.
Side Dish Ingredients
- 2 (12-oz) pkg broccoli, cauliflower, and carrot medley
- 1 (8-oz) pkg baby portobello mushrooms
- 3 Tbsp olive oil
Side Dish Instructions
- Preheat oven to 450°F. Toss vegetables with oil, and sprinkle lightly with salt and pepper on a rimmed baking sheet.
- Bake 20 minutes, turning once, or until vegetables are browned and tender.
