Ingredients

  • 1 cup frozen seasoning blend (diced onion, bell peppers, and celery)
  • 1 clove garlic, minced
  • ⅓ cup ketchup, divided
  • ¾ cup whole wheat breadcrumbs
  • 1 Tbsp Italian seasoning
  • 1 tsp salt
  • 1 tsp pepper
  • 2 large eggs, lightly beaten
  • 1½ lb ground beef

Instructions

  1. Preheat oven to 450°F. Microwave seasoning blend at HIGH 2 minutes or until tender.
  2. Stir in garlic, 1 Tbsp ketchup, breadcrumbs, seasoning, salt, pepper, and eggs; add beef, and gently combine.
  3. Shape mixture into 6 small meat loaves. Place on a wire rack over a foil-lined rimmed baking sheet; top with remaining ketchup.
  4. Bake 20 minutes or until centers are no longer pink.

Side Dish Ingredients

  • 2 (12-oz) pkg broccoli, cauliflower, and carrot medley
  • 1 (8-oz) pkg baby portobello mushrooms
  • 3 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 450°F. Toss vegetables with oil, and sprinkle lightly with salt and pepper on a rimmed baking sheet.
  2. Bake 20 minutes, turning once, or until vegetables are browned and tender.
