Chopped Greek Salad
Ingredients
- ½ (16-oz) pkg fetuccine
- ½ cup chopped onion
- 1 Tbsp minced garlic
- ¼ tsp crushed red pepper
- 1 Tbsp olive oil
- 1 (10-oz) pkg spinach
- ½ tsp dried oregano
- ½ cup heavy cream
- ¼ cup freshly grated Parmesan cheese
Instructions
- Cook pasta according to package directions; drain, and keep warm.
- Meanwhile, cook onion, garlic, and red pepper in hot oil in a skillet over medium heat 5 minutes, stirring frequently.
- Gradually add spinach, stirring until wilted. Stir in oregano. Add cream; bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened. Gradually stir in cheese until melted. Toss with hot cooked pasta.
Side Dish Ingredients
- ½ (10-oz) pkg chopped romaine lettuce
- ¼ cup chopped red onion
- ½ cucumber, chopped
- ¼ cup balsamic vinaigrette
- ¼ cup crumbled feta cheese
Side Dish Instructions
- Place lettuce, onion, and cucumber in a bowl; add vinaigrette. Toss and sprinkle with feta .
