Ingredients

  • ½ (16-oz) pkg fetuccine
  • ½ cup chopped onion
  • 1 Tbsp minced garlic
  • ¼ tsp crushed red pepper
  • 1 Tbsp olive oil
  • 1 (10-oz) pkg spinach
  • ½ tsp dried oregano
  • ½ cup heavy cream
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain, and keep warm.
  2. Meanwhile, cook onion, garlic, and red pepper in hot oil in a skillet over medium heat 5 minutes, stirring frequently.
  3. Gradually add spinach, stirring until wilted. Stir in oregano. Add cream; bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened. Gradually stir in cheese until melted. Toss with hot cooked pasta.

Side Dish Ingredients

  • ½ (10-oz) pkg chopped romaine lettuce
  • ¼ cup chopped red onion
  • ½ cucumber, chopped
  • ¼ cup balsamic vinaigrette
  • ¼ cup crumbled feta cheese

Side Dish Instructions

  1. Place lettuce, onion, and cucumber in a bowl; add vinaigrette. Toss and sprinkle with feta .
