Pork Chops with Balsamic-Bacon Sauce

Ingredients

  • 4 slices center-cut bacon, chopped
  • 6 (6-oz) bone-in pork chops
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup sliced red onion
  • 2 tsp jarred minced garlic
  • 1 Tbsp all-purpose flour
  • ⅔ cup low-sodium chicken broth
  • 3 Tbsp balsamic vinegar
  • 2 Tbsp whole-grain mustard

Instructions

  1. Cook bacon in a large nonstick skillet over medium heat until crisp; drain, reserving 2 Tbsp drippings in skillet.
  2. Sprinkle pork with salt and pepper; cook in hot drippings in skillet 3 to 4 minutes per side or until done. Remove from skillet; keep warm.
  3. Add onion and garlic to drippings in skillet; cook, stirring often, 4 minutes. Add flour; cook, stirring constantly, 2 minutes.
  4. Stir in broth, vinegar, mustard, and bacon; cook 2 to 3 minutes or until sauce is thickened. Spoon sauce over pork.

Side Dish Ingredients

  • 4 pears, sliced
  • 2 tsp fresh lemon juice
  • 1 (8.4-oz) pkg spinach, cherry, almond, and blue cheese salad kit (such as Dole)

Side Dish Instructions

  1. Toss pears in lemon juice.
  2. Prepare salad kit according to package directions. Add pears; toss.
