Pork Chops with Balsamic-Bacon Sauce
Pear and Cherry Spinach SaladIngredients
- 4 slices center-cut bacon, chopped
- 6 (6-oz) bone-in pork chops
- ½ tsp salt
- ½ tsp pepper
- 1 cup sliced red onion
- 2 tsp jarred minced garlic
- 1 Tbsp all-purpose flour
- ⅔ cup low-sodium chicken broth
- 3 Tbsp balsamic vinegar
- 2 Tbsp whole-grain mustard
Instructions
- Cook bacon in a large nonstick skillet over medium heat until crisp; drain, reserving 2 Tbsp drippings in skillet.
- Sprinkle pork with salt and pepper; cook in hot drippings in skillet 3 to 4 minutes per side or until done. Remove from skillet; keep warm.
- Add onion and garlic to drippings in skillet; cook, stirring often, 4 minutes. Add flour; cook, stirring constantly, 2 minutes.
- Stir in broth, vinegar, mustard, and bacon; cook 2 to 3 minutes or until sauce is thickened. Spoon sauce over pork.

- 4 pears, sliced
- 2 tsp fresh lemon juice
- 1 (8.4-oz) pkg spinach, cherry, almond, and blue cheese salad kit (such as Dole)
Side Dish Instructions
- Toss pears in lemon juice.
- Prepare salad kit according to package directions. Add pears; toss.
