Sausage, Zucchini, and Bean Soup

Ingredients

  • 1½ lb ground Italian turkey sausage
  • 2 Tbsp olive oil
  • 2 (16-oz) pkg sliced zucchini, yellow squash, and onion medley (see Note)
  • 2 Tbsp jarred minced garlic
  • 2 (14.5-oz) cans diced tomatoes with Italian seasonings
  • 1 (32-oz) carton low-sodium chicken broth
  • 1 (15-oz) can cannellini beans, drained and rinsed
  • 1 Tbsp chopped fresh thyme

Instructions

  1. Cook sausage in hot oil in a large Dutch oven over medium-high heat 4 to 5 minutes or until browned and crumbly. Add zucchini medley and garlic; cook 5 minutes or until tender.
  2. Add tomatoes, broth, and beans; bring to a boil, reduce heat, and simmer 10 minutes. Sprinkle with thyme.

Side Dish Ingredients

  • 1 (12-oz) whole wheat French bread baguette, cut into ½-inch slices
  • 2 Tbsp olive oil
  • ½ cup shredded Parmesan cheese
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Bake bread on a baking sheet 3 minutes per side or until golden.
  2. Brush tops with oil; sprinkle with cheese and pepper. Bake 1 to 2 minutes longer or until cheese is melted.
