Chicken, Broccoli, and Basil Stir-Fry

Ingredients

  • ½ lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 tsp sesame oil
  • ¾ cup broccoli florets
  • ¾ cup matchstick-cut carrots
  • 1 tsp jarred minced garlic
  • 3 Tbsp sweet chili sauce
  • 1½ Tbsp low-sodium soy sauce
  • 2 Tbsp chopped fresh basil

Instructions

  1. Cook chicken in hot oil in a large skillet over medium heat until browned. Stir in broccoli, carrots, and garlic; cook, stirring constantly, 3 to 4 minutes.
  2. Stir in chili sauce and soy sauce; cook 3 minutes. Stir in basil.

Side Dish Ingredients

  • 3 oz soba noodles
  • 1 green onion, chopped
  • 2 Tbsp chopped dry roasted, lightly salted peanuts

Side Dish Instructions

  1. Cook soba noodles according to package directions. Toss with onion and nuts.
