Pork Pad Thai
Ingredients
- ½ (16-oz) pkg spaghetti
- ½ lb ground pork
- 1 head bok choy, cut into ½-inch-thick slices
- 1 cup matchstick-cut carrots
- 2 green onions, chopped
- 2 cloves garlic, minced
- ⅓ cup chicken broth
- 3 Tbsp soy sauce
- 2 Tbsp rice vinegar
- 1½ Tbsp chili sauce with garlic
Instructions
- Cook pasta according to package directions; set aside.
- Meanwhile, cook pork and bok choy in a skillet over medium heat, stirring until pork is browned and crumbly; drain. Stir in carrots, onions, and garlic; cook 2 minutes.
- Whisk together broth, soy sauce, vinegar, and chili sauce; add to pork mixture and cook 1 minute. Add pasta, and toss.
