Pork Pad Thai

Ingredients

  • ½ (16-oz) pkg spaghetti
  • ½ lb ground pork
  • 1 head bok choy, cut into ½-inch-thick slices
  • 1 cup matchstick-cut carrots
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • ⅓ cup chicken broth
  • 3 Tbsp soy sauce
  • 2 Tbsp rice vinegar
  • 1½ Tbsp chili sauce with garlic

Instructions

  1. Cook pasta according to package directions; set aside.
  2. Meanwhile, cook pork and bok choy in a skillet over medium heat, stirring until pork is browned and crumbly; drain. Stir in carrots, onions, and garlic; cook 2 minutes.
  3. Whisk together broth, soy sauce, vinegar, and chili sauce; add to pork mixture and cook 1 minute. Add pasta, and toss.
