Popeye's Pasta
Breadsticks and Fruit Toss
Ingredients
- 1 (16-oz) pkg fettuccine
- 1 small onion, finely chopped
- 2 Tbsp minced garlic
- ⅛ tsp crushed red pepper
- 2 Tbsp olive oil
- 2 (10-oz) pkg spinach
- 1 tsp dried oregano
- 1 cup heavy cream
- ½ cup (or more) freshly grated Parmesan cheese
Instructions
- Cook pasta according to package directions; drain and keep warm.
- Meanwhile, cook onion, garlic, and red pepper in hot oil in a large skillet over medium heat 5 minutes, stirring often.
- Gradually add spinach, stirring until wilted. Stir in oregano. Add cream; bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened. Gradually stir in cheese until melted. Toss with hot cooked pasta.
Side Dish Ingredients
- 1 (11-oz) can refrigerated breadstick dough
- ½ lb seedless red grapes
- 1 pear
- 2 (4-oz) mandarin orange fruit cups, drained
Side Dish Instructions
- Bake breadsticks according to package directions.
- Rinse grapes, and remove from stems. Peel and chop pear. Toss grapes, pear, and oranges to serve.
