Breadsticks and Fruit Toss

Ingredients

  • 1 (16-oz) pkg fettuccine
  • 1 small onion, finely chopped
  • 2 Tbsp minced garlic
  • ⅛ tsp crushed red pepper
  • 2 Tbsp olive oil
  • 2 (10-oz) pkg spinach
  • 1 tsp dried oregano
  • 1 cup heavy cream
  • ½ cup (or more) freshly grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions; drain and keep warm.
  2. Meanwhile, cook onion, garlic, and red pepper in hot oil in a large skillet over medium heat 5 minutes, stirring often.
  3. Gradually add spinach, stirring until wilted. Stir in oregano. Add cream; bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened. Gradually stir in cheese until melted. Toss with hot cooked pasta.

Side Dish Ingredients

  • 1 (11-oz) can refrigerated breadstick dough
  • ½ lb seedless red grapes
  • 1 pear
  • 2 (4-oz) mandarin orange fruit cups, drained

Side Dish Instructions

  1. Bake breadsticks according to package directions.
  2. Rinse grapes, and remove from stems. Peel and chop pear. Toss grapes, pear, and oranges to serve.
