Pizza Mac and Cheese

Ingredients

  • 1 (16-oz) pkg penne pasta (or use elbow macaroni)
  • 3 Tbsp butter
  • 3 Tbsp all-purpose flour
  • 2 tsp Italian seasoning
  • ⅛ to ¼ tsp crushed red pepper
  • ¼ cup tomato paste
  • 2 cups milk
  • 3 cups shredded mozzarella cheese, divided
  • 1 (3.5-oz) pkg sliced pepperoni, divided

Instructions

  1. Preheat oven to 425°F. Cook pasta according to package directions; drain and set aside.
  2. Meanwhile, melt butter in a large oven-safe skillet over medium heat. Add flour, seasoning, and red pepper. Cook, stirring constantly, 2 minutes. Add tomato paste, and cook, stirring constantly, 1 minute.
  3. Gradually whisk in milk; cook, whisking frequently, until thick and bubbly. Stir in 1½ cups cheese and half of pepperoni. Stir in cooked pasta; sprinkle with 1½ cups cheese and remaining pepperoni.
  4. Bake 10 minutes or until cheese is melted.

Side Dish Ingredients

  • 2 (12-oz) pkg broccoli florets
  • 2 Tbsp butter
  • 6 (4-oz) mandarin orange fruit cups, chilled

Side Dish Instructions

  1. Cook broccoli according to package directions; transfer to a bowl. Toss with butter until melted. Season with salt and pepper to taste.
