Pizza Mac and Cheese
Steamed Broccoli and Orange Cups
Ingredients
- 1 (16-oz) pkg penne pasta (or use elbow macaroni)
- 3 Tbsp butter
- 3 Tbsp all-purpose flour
- 2 tsp Italian seasoning
- ⅛ to ¼ tsp crushed red pepper
- ¼ cup tomato paste
- 2 cups milk
- 3 cups shredded mozzarella cheese, divided
- 1 (3.5-oz) pkg sliced pepperoni, divided
Instructions
- Preheat oven to 425°F. Cook pasta according to package directions; drain and set aside.
- Meanwhile, melt butter in a large oven-safe skillet over medium heat. Add flour, seasoning, and red pepper. Cook, stirring constantly, 2 minutes. Add tomato paste, and cook, stirring constantly, 1 minute.
- Gradually whisk in milk; cook, whisking frequently, until thick and bubbly. Stir in 1½ cups cheese and half of pepperoni. Stir in cooked pasta; sprinkle with 1½ cups cheese and remaining pepperoni.
- Bake 10 minutes or until cheese is melted.

- 2 (12-oz) pkg broccoli florets
- 2 Tbsp butter
- 6 (4-oz) mandarin orange fruit cups, chilled
Side Dish Instructions
- Cook broccoli according to package directions; transfer to a bowl. Toss with butter until melted. Season with salt and pepper to taste.
