Chicken and Waffle Sandwiches

Ingredients

  • 6 slices bacon, cut in half crosswise
  • ¼ cup whole-grain mustard
  • 2 Tbsp maple syrup
  • 4 frozen multigrain waffles, toasted
  • 4 slices thinly sliced havarti cheese
  • 2 green leaf lettuce leaves
  • 1 tomato, thinly sliced
  • ⅓ lb thinly sliced oven-roasted deli chicken

Instructions

  1. Cook bacon in a skillet over medium heat until crisp; drain on paper towels.
  2. Stir together mustard and syrup in a bowl; drizzle over one side of each toasted waffle.
  3. Top 2 waffles evenly with cheese, lettuce, tomato, chicken and bacon. Cover with remaining waffles, mustard side down.

Side Dish Ingredients

  • ½ (16-oz) carton strawberries, sliced
  • ¼ lb red grapes
  • 1 (5.3-oz) carton plain Greek yogurt
  • 2 Tbsp honey
  • ½ (8-oz) pkg pita chips

Side Dish Instructions

  1. Combine strawberries and grapes; spoon into dishes. Top with yogurt, and drizzle with honey.
  2. Serve pita chips on the side.
