Chicken and Waffle Sandwiches
Honey-Drizzled Fruit and Yogurt and Pita ChipsIngredients
- 6 slices bacon, cut in half crosswise
- ¼ cup whole-grain mustard
- 2 Tbsp maple syrup
- 4 frozen multigrain waffles, toasted
- 4 slices thinly sliced havarti cheese
- 2 green leaf lettuce leaves
- 1 tomato, thinly sliced
- ⅓ lb thinly sliced oven-roasted deli chicken
Instructions
- Cook bacon in a skillet over medium heat until crisp; drain on paper towels.
- Stir together mustard and syrup in a bowl; drizzle over one side of each toasted waffle.
- Top 2 waffles evenly with cheese, lettuce, tomato, chicken and bacon. Cover with remaining waffles, mustard side down.
Side Dish Ingredients
- ½ (16-oz) carton strawberries, sliced
- ¼ lb red grapes
- 1 (5.3-oz) carton plain Greek yogurt
- 2 Tbsp honey
- ½ (8-oz) pkg pita chips
Side Dish Instructions
- Combine strawberries and grapes; spoon into dishes. Top with yogurt, and drizzle with honey.
- Serve pita chips on the side.
