Oven-Baked Meatballs and Linguine

Ingredients

  • 2 lb ground beef
  • ½ cup finely chopped onion
  • 1 Tbsp Italian seasoning
  • 1½ tsp dried basil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 large egg, lightly beaten
  • 2 (24-oz) cans marinara sauce
  • 1 (16-oz) pkg linguine
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F; line a rimmed baking sheet with foil. Place a wire rack over foil.
  2. Stir together beef, onion, Italian seasoning, basil, salt, and pepper in a large bowl. Add beaten egg, stirring to blend.
  3. Shape into 2-inch meatballs; place on wire rack. Bake 20 minutes.
  4. Transfer meatballs to a large skillet; add marinara sauce, and cook over medium heat 5 minutes or until sauce is thoroughly heated.
  5. Meanwhile, cook pasta according to package directions; toss with meatballs and sauce. Sprinkle with cheese.

  • 1 head broccoli, cut into florets
  • 2 cloves garlic, minced
  • 3 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 425°F. Spread broccoli on a large baking sheet, and toss with garlic. Drizzle with oil, and season with desired amount of salt and pepper. Bake 15 minutes or until crisp-tender.
