Crunchy Shrimp Tacos with Spicy Sour Cream
Easy Red Rice
Ingredients
- 1 (25-oz) pkg frozen breaded popcorn shrimp
- 1 (8-oz) carton sour cream
- 1 (12.5-oz) pkg soft taco dinner kit
- 1 (16-oz) pkg tricolor coleslaw
- 2 avocados, sliced
Instructions
- Cook shrimp according to package directions.
- Stir together sour cream and seasoning packet (from kit) in a bowl.
- Heat tortillas, if desired. Serve shrimp in tortillas topped with coleslaw, avocados, sour cream mixture, and taco sauce (from kit).
Side Dish Ingredients
- 1½ cups long-grain white rice
- ½ cup finely chopped onion
- 1 clove garlic, minced
- 1 Tbsp olive oil
- 1½ Tbsp tomato paste
- 1 tsp dried oregano
Side Dish Instructions
- Cook rice according to package directions.
- Cook onion and garlic in hot oil in a skillet over medium-high heat 4 minutes, stirring often. Stir in tomato paste; cook 2 minutes.
- Remove from heat; stir in hot cooked rice and oregano. Season with salt and pepper to taste.
