Grilled Chicken Thighs with Cucumber-Mint Salad

Ingredients

  • 2 cups diced seeded English cucumber (about 1 large)
  • 6 Tbsp chopped fresh mint
  • 3 Tbsp finely chopped red onion
  • 3 Tbsp extra-virgin olive oil, divided
  • 2 Tbsp white-wine vinegar
  • ¾ tsp salt, divided
  • 3 cloves garlic, minced
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 4 large boneless, skinless chicken thighs (about 1¼ lb), trimmed

Instructions

  1. Preheat grill to medium-high.
  2. Combine cucumber, mint, onion, 2 Tbsp oil, vinegar and ¼ tsp salt in a medium bowl. Set aside.
  3. Mash garlic and the remaining ½ tsp salt in a small bowl until it becomes a paste. Stir in the remaining 1 Tbsp oil, coriander and cumin. Rub the mixture on both sides of each chicken thigh.
  4. Grill the chicken thighs until an instant-read thermometer inserted into the thickest part registers 165°F, 3 to 5 minutes per side. Serve the chicken with the cucumber salad.

  • 2 cups water
  • 2 Tbsp lemon juice
  • 1 Tbsp extra-virgin olive oil
  • ½ tsp salt
  • ⅛ tsp turmeric
  • 1⅓ cups whole-wheat couscous
  • ½ cup currants
  • 1 bunch scallions, chopped
  • Salt, to taste

Side Dish Instructions

  1. Place water, lemon juice, oil, salt and turmeric in a medium saucepan; bring to a boil. Stir in couscous and currants. Remove from heat; cover and let stand for 5 minutes. Uncover, fluff with a fork and stir in scallions. Season with salt.
