Garlic Pasta with Shrimp and Asparagus

Ingredients

  • 9 oz whole-grain penne pasta
  • 1½ lb peeled, large raw shrimp, deveined
  • 1 lb asparagus, broken into 2-inch pieces
  • ¾ cup grated Parmesan cheese
  • ⅓ cup fat-free milk
  • 3 Tbsp light butter
  • 4 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Cook pasta according to package directions, adding shrimp and asparagus during last 3 minutes of cooking; drain.
  2. Combine pasta mixture with remaining ingredients; toss well.

Side Dish Ingredients

  • 1 (10-oz) pkg spring mix
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp apple cider vinegar
  • ¾ tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp pepper

  1. Toss together all ingredients in a bowl.
