Garlic Pasta with Shrimp and Asparagus
Spring Greens with Simple Vinaigrette
Ingredients
- 9 oz whole-grain penne pasta
- 1½ lb peeled, large raw shrimp, deveined
- 1 lb asparagus, broken into 2-inch pieces
- ¾ cup grated Parmesan cheese
- ⅓ cup fat-free milk
- 3 Tbsp light butter
- 4 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
Instructions
- Cook pasta according to package directions, adding shrimp and asparagus during last 3 minutes of cooking; drain.
- Combine pasta mixture with remaining ingredients; toss well.

- 1 (10-oz) pkg spring mix
- 2 Tbsp extra virgin olive oil
- 2 Tbsp apple cider vinegar
- ¾ tsp dried oregano
- ¼ tsp salt
- ¼ tsp pepper

- Toss together all ingredients in a bowl.
