Chicken Sausage with Roasted Potatoes

Ingredients
- 6 (3-oz) fully cooked chicken-apple sausage links, sliced
- 2 lb red potatoes, cut into ½-inch wedges
- 3 green bell peppers, coarsely chopped
- 2 onions, cut into wedges
- 3 Tbsp olive oil
- 1½ tsp fennel seeds
- 1 tsp smoked paprika (or regular paprika)
- ¾ tsp garlic powder
- ½ tsp salt
Instructions
- Preheat oven to 400°F. Place sausage, potatoes, bell peppers, and onion on 2 foil-lined baking sheets coated with cooking spray.
- Drizzle with oil, and sprinkle with fennel seeds, paprika, and garlic powder. Toss and spread in a single layer.
- Bake 30 minutes, rotating pans and stirring every 10 minutes, or until potatoes are tender.
- Remove from oven, and sprinkle with salt. Pull up edges of foil to seal mixture, and let stand 10 minutes.
Side Dish Ingredients
- 4 tomatoes, sliced
- 2 Tbsp balsamic glaze (such as Gia Russa)
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Arrange tomatoes on a platter. Drizzle with balsamic glaze, and sprinkle with salt and pepper.
