Chicken Sausage with Roasted Potatoes

Ingredients

  • 6 (3-oz) fully cooked chicken-apple sausage links, sliced
  • 2 lb red potatoes, cut into ½-inch wedges
  • 3 green bell peppers, coarsely chopped
  • 2 onions, cut into wedges
  • 3 Tbsp olive oil
  • 1½ tsp fennel seeds
  • 1 tsp smoked paprika (or regular paprika)
  • ¾ tsp garlic powder
  • ½ tsp salt

Instructions

  1. Preheat oven to 400°F. Place sausage, potatoes, bell peppers, and onion on 2 foil-lined baking sheets coated with cooking spray.
  2. Drizzle with oil, and sprinkle with fennel seeds, paprika, and garlic powder. Toss and spread in a single layer.
  3. Bake 30 minutes, rotating pans and stirring every 10 minutes, or until potatoes are tender.
  4. Remove from oven, and sprinkle with salt. Pull up edges of foil to seal mixture, and let stand 10 minutes.

Side Dish Ingredients

  • 4 tomatoes, sliced
  • 2 Tbsp balsamic glaze (such as Gia Russa)
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Arrange tomatoes on a platter. Drizzle with balsamic glaze, and sprinkle with salt and pepper.
