Barbecue Pork Tostadas

Ingredients

  • ½ (12-oz) container fully cooked sauceless pulled pork (such as Curly's)
  • ½ (8.3-oz) can baked beans with bacon and brown sugar sauce (such as Bush's Best)
  • 3 (0.63-oz) tostada shells (such as Guerrero)
  • ¾ cup shredded Monterey Jack cheese
  • 1 (10.5-oz) pkg barbecue-Ranch chopped salad kit (such as Taylor Farms) 
  • ¼ cup thinly sliced red onion

Instructions

  1. Preheat broiler. Heat pork and beans according to package directions. Slightly mash beans.
  2. Arrange tostada shells on a baking sheet. Spread beans on shells; top with pork and cheese.
  3. Broil 1 to 2 minutes or until cheese is melted and beginning to brown.
  4. Assemble salad kit according to directions, omitting tortilla strips. Reserve tortilla strips and half of salad for another use. Top tostadas with remaining salad and onion.

  • 1 pint grape tomatoes
  • 1 green onion, chopped
  • 1 Tbsp extra virgin olive oil
  • 1 tsp apple cider vinegar
  • ¼ tsp kosher salt
  • ⅛ tsp pepper
  • ⅛ tsp ground cumin

Side Dish Instructions

  1. Place tomatoes in a large bowl. Add onion, oil, vinegar, salt, pepper, and cumin. Toss; let stand 10 minutes.
