Pork Chops with Brussels Sprouts and Apple

Ingredients

  • 2 (6-oz) bone-in pork chops
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1 Tbsp olive oil
  • 2 slices center-cut bacon, chopped
  • ¼ cup low-sodium chicken broth
  • 1 Tbsp apple cider vinegar
  • 2 cups shredded Brussels sprouts
  • 1 apple, sliced

Instructions

  1. Sprinkle pork with ⅛ tsp each salt and pepper. Cook in hot oil in a nonstick skillet over medium-high heat 3 to 4 minutes per side. Remove from skillet; cover and keep warm.
  2. Add bacon to skillet; cook over medium-high heat 5 minutes or until crisp. Drain bacon, reserving drippings in skillet.
  3. Add broth and vinegar to hot drippings; bring to a simmer. Add Brussels sprouts, apple, and ⅛ tsp each salt and pepper. Cook 6 to 8 minutes or until Brussels sprouts and apple are tender.
  4. Serve pork with Brussels sprouts mixture; sprinkle with bacon.

Side Dish Ingredients

  • 1 (24-oz) pkg refrigerated mashed sweet potatoes
  • 2 Tbsp maple syrup
  • 1 Tbsp butter

Side Dish Instructions

  1. Microwave potatoes according to package directions; stir in syrup and butter. Serve half of potatoes; chill remaining half of potatoes for a future meal.
