Pork Chops with Brussels Sprouts and Apple
Maple Mashed Sweet PotatoesIngredients
- 2 (6-oz) bone-in pork chops
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1 Tbsp olive oil
- 2 slices center-cut bacon, chopped
- ¼ cup low-sodium chicken broth
- 1 Tbsp apple cider vinegar
- 2 cups shredded Brussels sprouts
- 1 apple, sliced
Instructions
- Sprinkle pork with ⅛ tsp each salt and pepper. Cook in hot oil in a nonstick skillet over medium-high heat 3 to 4 minutes per side. Remove from skillet; cover and keep warm.
- Add bacon to skillet; cook over medium-high heat 5 minutes or until crisp. Drain bacon, reserving drippings in skillet.
- Add broth and vinegar to hot drippings; bring to a simmer. Add Brussels sprouts, apple, and ⅛ tsp each salt and pepper. Cook 6 to 8 minutes or until Brussels sprouts and apple are tender.
- Serve pork with Brussels sprouts mixture; sprinkle with bacon.

- 1 (24-oz) pkg refrigerated mashed sweet potatoes
- 2 Tbsp maple syrup
- 1 Tbsp butter
Side Dish Instructions
- Microwave potatoes according to package directions; stir in syrup and butter. Serve half of potatoes; chill remaining half of potatoes for a future meal.
