Upside-Down Turkey Shepherd's Pie

Ingredients

  • 2 lb ground turkey
  • 1 (8-oz) pkg chopped onions
  • 1 (16-oz) pkg frozen peas and carrots
  • 1¾ cups low-sodium chicken broth
  • 2 Tbsp cornstarch
  • 2 Tbsp tomato paste with Italian herbs
  • 1 Tbsp chopped fresh rosemary
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (24-oz) pkg refrigerated mashed potatoes (such as Simply Potatoes)

Instructions

  1. Cook turkey and onions in a large skillet over medium heat 8 minutes or until turkey is browned and crumbly and onion is tender. Add peas and carrots.
  2. Whisk together broth, cornstarch, tomato paste, rosemary, salt, and pepper; add to skillet. Cook 6 to 8 minutes or until sauce is thickened.
  3. Meanwhile, cook potatoes according to package directions.
  4. Divide potatoes among 6 bowls; top with turkey mixture.
