Upside-Down Turkey Shepherd's Pie

Ingredients
- 2 lb ground turkey
- 1 (8-oz) pkg chopped onions
- 1 (16-oz) pkg frozen peas and carrots
- 1¾ cups low-sodium chicken broth
- 2 Tbsp cornstarch
- 2 Tbsp tomato paste with Italian herbs
- 1 Tbsp chopped fresh rosemary
- ½ tsp salt
- ½ tsp pepper
- 1 (24-oz) pkg refrigerated mashed potatoes (such as Simply Potatoes)
Instructions
- Cook turkey and onions in a large skillet over medium heat 8 minutes or until turkey is browned and crumbly and onion is tender. Add peas and carrots.
- Whisk together broth, cornstarch, tomato paste, rosemary, salt, and pepper; add to skillet. Cook 6 to 8 minutes or until sauce is thickened.
- Meanwhile, cook potatoes according to package directions.
- Divide potatoes among 6 bowls; top with turkey mixture.
