Philly-Style Cheese Panini

Ingredients

  • 2 (8-oz) pkg sliced bell pepper and onion medley
  • 1 (8-oz) pkg sliced baby portobello mushrooms
  • 3 Tbsp jarred minced garlic
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup mayonnaise
  • ¼ cup pesto
  • 12 (1-oz) slices whole-grain artisan bread
  • 6 (0.67-oz) slices provolone cheese

Instructions

  1. Cook pepper medley, mushrooms, and garlic in hot oil in a large skillet over medium heat 8 to 10 minutes or until tender. Sprinkle with salt and pepper.
  2. Combine mayonnaise and pesto; spread over one side of each bread slice.
  3. Layer 6 slices of bread with vegetable mixture and cheese. Cover with 6 bread slices.
  4. Cook sandwiches, in batches, in a panini press until toasted.

Side Dish Ingredients

  • 1 (7.6-oz) pkg sweet Dijon-onion salad kit (such as Fresh Express)
  • 2 apples, sliced
  • 1 Tbsp fresh lemon juice
  • 1 (5-oz) pkg baby arugula

Side Dish Instructions

  1. Prepare salad kit according to package directions.
  2. Toss apples with lemon juice. Add apples and arugula to salad kit; toss.
