Philly-Style Cheese Panini
Mixed Green Salad with ApplesIngredients
- 2 (8-oz) pkg sliced bell pepper and onion medley
- 1 (8-oz) pkg sliced baby portobello mushrooms
- 3 Tbsp jarred minced garlic
- 2 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- ¼ cup mayonnaise
- ¼ cup pesto
- 12 (1-oz) slices whole-grain artisan bread
- 6 (0.67-oz) slices provolone cheese
Instructions
- Cook pepper medley, mushrooms, and garlic in hot oil in a large skillet over medium heat 8 to 10 minutes or until tender. Sprinkle with salt and pepper.
- Combine mayonnaise and pesto; spread over one side of each bread slice.
- Layer 6 slices of bread with vegetable mixture and cheese. Cover with 6 bread slices.
- Cook sandwiches, in batches, in a panini press until toasted.
Side Dish Ingredients
- 1 (7.6-oz) pkg sweet Dijon-onion salad kit (such as Fresh Express)
- 2 apples, sliced
- 1 Tbsp fresh lemon juice
- 1 (5-oz) pkg baby arugula
Side Dish Instructions
- Prepare salad kit according to package directions.
- Toss apples with lemon juice. Add apples and arugula to salad kit; toss.
