Honey Glazed Pork Tenderloin
Steamed Peas and Scalloped Potatoes
Ingredients
- 2 (1-lb) pork tenderloins, trimmed
- 1 tsp ground cumin
- 1 tsp salt
- 1 tsp pepper
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- 3 Tbsp olive oil
- 2 Tbsp honey
- 1 Tbsp butter, melted
Instructions
- Preheat oven to 425°F.
- Stir together cumin, salt, pepper, cinnamon, and ginger. Rub pork with oil and sprinkle with seasoning mixture. Place in a greased 13- x 9-inch baking pan, and bake 12 minutes.
- Whisk together honey and melted butter; brush pork with honey mixture and bake 5 to 6 minutes more or until a thermometer inserted in thickest portion of pork registers 145°F. Let stand 5 minutes; slice.
Side Dish Ingredients
- 1 (15-oz) pkg frozen peas
- 2 Tbsp butter
- ½ tsp dried thyme
- 2 (4.7-oz) boxes scalloped potatoes
Side Dish Instructions
- Steam peas according to package directions; toss with butter and thyme. Season with salt and pepper to taste.
- Cook potatoes according to package directions.
