Honey Glazed Pork Tenderloin

Ingredients

  • 2 (1-lb) pork tenderloins, trimmed
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • 3 Tbsp olive oil
  • 2 Tbsp honey
  • 1 Tbsp butter, melted

Instructions

  1. Preheat oven to 425°F.
  2. Stir together cumin, salt, pepper, cinnamon, and ginger. Rub pork with oil and sprinkle with seasoning mixture. Place in a greased 13- x 9-inch baking pan, and bake 12 minutes.
  3. Whisk together honey and melted butter; brush pork with honey mixture and bake 5 to 6 minutes more or until a thermometer inserted in thickest portion of pork registers 145°F. Let stand 5 minutes; slice.

Side Dish Ingredients

  • 1 (15-oz) pkg frozen peas
  • 2 Tbsp butter
  • ½ tsp dried thyme
  • 2 (4.7-oz) boxes scalloped potatoes

Side Dish Instructions

  1. Steam peas according to package directions; toss with butter and thyme. Season with salt and pepper to taste.
  2. Cook potatoes according to package directions.
