Ingredients

  • 4 Tbsp butter
  • 1½ lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 (8-oz) pkg sliced mushrooms
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • ⅓ cup all-purpose flour
  • 2 tsp Italian seasoning
  • 3 cups chicken broth
  • ¾ cup heavy cream
  • 1 (12-oz) pkg frozen peas and carrots
  • 1 (7.75-oz) pouch cheese-garlic biscuit mix

Instructions

  1. Preheat oven to 375°F. Melt butter in a large Dutch oven over medium heat; add chicken, mushrooms, onion, and garlic. Cook, stirring occasionally, until chicken is done and vegetables are tender.
  2. Add flour and Italian seasoning; cook, stirring constantly, 2 minutes.
  3. Stir in broth, cream, and peas and carrots. Bring to a boil, reduce heat, and simmer 10 to 15 minutes or until thickened and bubbly.
  4. Meanwhile, prepare biscuit dough according to package directions. Drop biscuits by tablespoonfuls over chicken mixture. Bake 25 to 30 minutes or until biscuits are done.
