Sticky Honey-Soy Chicken Thighs

Ingredients

  • 4 boneless, skinless chicken thighs (about ¾ lb)
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ Tbsp vegetable oil
  • ½ Tbsp dark sesame oil
  • 1½ Tbsp honey
  • 1½ Tbsp low-sodium soy sauce
  • ½ Tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 green onion, sliced

Instructions

  1. Sprinkle chicken with salt and pepper. Cook in hot oils in a nonstick skillet over medium-high heat 3 minutes per side.
  2. Stir together honey, soy sauce, vinegar, and garlic; pour over chicken in skillet. Cover, reduce heat, and simmer 10 minutes or until chicken is done; uncover and cook 3 minutes or until sauce is syrupy.
  3. Sprinkle with green onion before serving.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen broccoli, cauliflower, and carrots (such as Birds Eye)
  • ½ Tbsp dark sesame oil
  • ½ Tbsp low-sodium soy sauce
  • 2 tsp sesame seeds

Side Dish Instructions

  1. Microwave vegetables according to package directions; transfer to a bowl. Stir in oil, soy sauce, and sesame seeds.
