Loaded Sweet Potato Waffle Fries

Ingredients

  • 1 (20-oz) pkg frozen waffle-cut sweet potato fries
  • 3 Tbsp olive oil, divided
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (20-oz) pkg ground turkey
  • 1 (8-oz) pouch New Mexico taco skillet sauce (such as Frontera)
  • 1 cup shredded Monterey Jack cheese
  • 1 tomato, chopped
  • ¼ cup chopped fresh cilantro
  • ½ cup reduced-fat sour cream

Instructions

  1. Preheat oven to 350°F. Place fries on a large rimmed baking sheet; toss with 2 Tbsp oil, salt, and pepper. Bake 18 to 22 minutes or until crisp.
  2. Meanwhile, cook turkey in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until crumbly and no longer pink. Stir in taco sauce; cook 3 to 4 minutes or until thoroughly heated.
  3. Spoon turkey mixture over fries; sprinkle with cheese. Bake 2 minutes longer or until cheese is melted.
  4. Sprinkle with tomato and cilantro. Dollop with sour cream.
