Surf-and-Turf Stir-Fry
Easy Cauliflower "Rice"
Ingredients
- ⅓ lb peeled and deveined, large raw shrimp
- 1 Tbsp olive oil
- ½ lb flank steak, partially frozen
- 1 clove garlic, minced
- 1 (12-oz) pkg broccoli florets
- 1 red bell pepper, thinly sliced
- 3 green onions, thinly sliced
- ½ Tbsp minced ginger
- 1 cup unsweetened coconut milk
- 1 Tbsp soy sauce
- ½ Tbsp cornstarch
- 1 Tbsp chopped fresh cilantro
Instructions
- Season shrimp lightly with salt and pepper. Cook in hot oil in a large nonstick skillet or wok over medium-high heat 2 to 3 minutes or just until shrimp turn pink. Remove from skillet; keep warm.
- Thinly slice steak across the grain. Cook in skillet 2 minutes. Add garlic, broccoli, bell pepper, green onions, and ginger; cook 6 minutes or until tender.
- Whisk together milk, soy sauce, and cornstarch in a small bowl; add to skillet, and bring to a boil. Boil 1 to 2 minutes, stirring constantly, or until thickened. Stir in shrimp; cook 1 minute. Stir in cilantro.

- 1 Tbsp olive oil
Side Dish Instructions
- Cook cauliflower rice according to package directions. Stir in oil and salt and pepper to taste.
