Surf-and-Turf Stir-Fry

Ingredients

  • ⅓ lb peeled and deveined, large raw shrimp
  • 1 Tbsp olive oil
  • ½ lb flank steak, partially frozen
  • 1 clove garlic, minced
  • 1 (12-oz) pkg broccoli florets
  • 1 red bell pepper, thinly sliced
  • 3 green onions, thinly sliced
  • ½ Tbsp minced ginger
  • 1 cup unsweetened coconut milk
  • 1 Tbsp soy sauce
  • ½ Tbsp cornstarch
  • 1 Tbsp chopped fresh cilantro

Instructions

  1. Season shrimp lightly with salt and pepper. Cook in hot oil in a large nonstick skillet or wok over medium-high heat 2 to 3 minutes or just until shrimp turn pink. Remove from skillet; keep warm.
  2. Thinly slice steak across the grain. Cook in skillet 2 minutes. Add garlic, broccoli, bell pepper, green onions, and ginger; cook 6 minutes or until tender.
  3. Whisk together milk, soy sauce, and cornstarch in a small bowl; add to skillet, and bring to a boil. Boil 1 to 2 minutes, stirring constantly, or until thickened. Stir in shrimp; cook 1 minute. Stir in cilantro.

  • 1 (12-oz) pkg frozen riced cauliflower (such as Green Giant)
  • 1 Tbsp olive oil

Side Dish Instructions

  1. Cook cauliflower rice according to package directions. Stir in oil and salt and pepper to taste.
