Spicy Maple Salmon

Sautéed Lemon Asparagus and Mushrooms

Ingredients

  • 2½ Tbsp spicy brown mustard
  • 1½ Tbsp pure maple syrup
  • ¼ tsp kosher salt
  • ⅛ tsp cayenne pepper
  • 2 salmon fillets

Instructions

  1. Preheat broiler. Combine mustard, syrup, salt, and cayenne pepper in a small bowl. Brush over fish; place on a parchment paper-lined baking sheet.
  2. Broil 8 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 1 lb asparagus, trimmed
  • 2 Tbsp olive oil, divided
  • 1 tsp lemon zest
  • ½ Tbsp fresh lemon juice
  • 1 (8-oz) pkg sliced mushrooms

Side Dish Instructions

  1. Sauté asparagus in 1 Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until crisp-tender.
  2. Stir in lemon zest and juice; cook 1 minute. Season with salt and pepper to taste. Remove from skillet; cover to keep warm.
  3. Sauté mushrooms in 1 Tbsp hot oil in skillet over medium-high heat 10 to 15 minutes or until well browned. Season with salt and pepper to taste.
