Spicy Maple Salmon
Sautéed Lemon Asparagus and Mushrooms
Ingredients
- 2½ Tbsp spicy brown mustard
- 1½ Tbsp pure maple syrup
- ¼ tsp kosher salt
- ⅛ tsp cayenne pepper
- 2 salmon fillets
Instructions
- Preheat broiler. Combine mustard, syrup, salt, and cayenne pepper in a small bowl. Brush over fish; place on a parchment paper-lined baking sheet.
- Broil 8 minutes or until fish flakes with a fork.
Side Dish Ingredients
- 1 lb asparagus, trimmed
- 2 Tbsp olive oil, divided
- 1 tsp lemon zest
- ½ Tbsp fresh lemon juice
- 1 (8-oz) pkg sliced mushrooms
Side Dish Instructions
- Sauté asparagus in 1 Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until crisp-tender.
- Stir in lemon zest and juice; cook 1 minute. Season with salt and pepper to taste. Remove from skillet; cover to keep warm.
- Sauté mushrooms in 1 Tbsp hot oil in skillet over medium-high heat 10 to 15 minutes or until well browned. Season with salt and pepper to taste.
