Stuffing-Topped Chicken Casserole

Ingredients

  • 2 boneless, skinless chicken breasts
  • ½ cup chicken broth
  • 1 (10.75-oz) can cream of chicken soup
  • 1 cup herb stuffing mix
  • 3 Tbsp butter, melted
  • 4 slices Swiss cheese

Instructions

  1. Preheat oven to 350°F. Halve chicken breasts lengthwise to make 4 thin cutlets.
  2. Whisk broth and soup in a bowl until smooth. In a separate bowl, toss together stuffing and melted butter.
  3. Place chicken in a lightly greased 9-inch baking dish; top with cheese slices.
  4. Pour soup mixture over chicken and cheese; top with stuffing mix.
  5. Bake, uncovered, 30 minutes. Serve over rice.

  • ¾ cup long-grain white rice
  • 1 (12-oz) pkg green beans
