Bow-ties 'n Chicken

Ingredients

  • 6 oz bow-tie pasta (farfalle)
  • 1 Tbsp butter
  • ¾ lb boneless, skinless chicken breasts, cut into bite-size pieces
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 1 (8-oz) pkg sliced mushrooms
  • 1 (10.75-oz) can cream of chicken soup
  • ⅓ cup milk
  • ⅓ cup pesto

Instructions

  1. Cook pasta according to package directions.
  2. Melt butter in a large nonstick skillet over medium-high heat. Add chicken to skillet; sprinkle with salt and pepper.
  3. Sauté 5 minutes or until lightly browned. Add mushrooms; sauté 5 minutes.
  4. Stir in soup, milk, and pesto until blended.
  5. Bring to a simmer; reduce heat, and cook 5 minutes. Stir in cooked pasta, and cook until thoroughly heated.

  • 1 (16-oz) pkg frozen mixed vegetables
  • 1 Tbsp butter

Side Dish Instructions

  1. Cook vegetables according to package directions; toss with butter, and season with salt and pepper to taste.
