Hazelnut-Crusted Salmon
Gourmet Greens with Orange SectionsIngredients
- 2 tsp whole-grain mustard
- ½ tsp honey
- ½ tsp white wine vinegar
- 1 (½-lb) salmon fillet
- ¼ tsp salt
- ¼ tsp pepper
- 2½ Tbsp chopped hazelnuts
- ¾ tsp chopped fresh tarragon
Instructions
- Preheat oven to 425°F. Stir together mustard, honey, and vinegar in a small bowl.
- Place fish on a parchment paper-lined baking sheet; season with salt and pepper. Spread mustard mixture over fish. Combine nuts and tarragon; sprinkle over fish, and press gently to adhere.
- Bake 10 to 15 minutes or until fish flakes with a fork. Cut into 2 portions.

- 1 tsp white wine vinegar
- ⅛ tsp salt
- ⅛ tsp pepper
- 4 cups mixed greens
- 1 navel orange, peeled and sectioned (about 2 cups)
- ¼ cup thinly sliced red onion
Side Dish Instructions
- Whisk together oil, vinegar, salt, and pepper in a bowl. Add greens, orange, and onion; toss.
