Hazelnut-Crusted Salmon

Ingredients

  • 2 tsp whole-grain mustard
  • ½ tsp honey
  • ½ tsp white wine vinegar
  • 1 (½-lb) salmon fillet
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2½ Tbsp chopped hazelnuts
  • ¾ tsp chopped fresh tarragon

Instructions

  1. Preheat oven to 425°F. Stir together mustard, honey, and vinegar in a small bowl.
  2. Place fish on a parchment paper-lined baking sheet; season with salt and pepper. Spread mustard mixture over fish. Combine nuts and tarragon; sprinkle over fish, and press gently to adhere.
  3. Bake 10 to 15 minutes or until fish flakes with a fork. Cut into 2 portions.

  • 1 Tbsp extra virgin olive oil
  • 1 tsp white wine vinegar
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 4 cups mixed greens
  • 1 navel orange, peeled and sectioned (about 2 cups)
  • ¼ cup thinly sliced red onion

Side Dish Instructions

  1. Whisk together oil, vinegar, salt, and pepper in a bowl. Add greens, orange, and onion; toss.
