Sweet and Sour Barbecue Chicken and Snow Peas

Ingredients

  • ½ cup sweet and sour sauce
  • ¼ cup hoisin sauce
  • 3 Tbsp rice vinegar
  • 1 Tbsp sesame oil
  • 1 tsp garlic powder
  • ½ tsp ground ginger
  • ½ tsp crushed red pepper (optional)
  • 2 lb boneless skinless chicken breasts
  • 1 Tbsp vegetable oil
  • 2 (8-oz) pkg fresh snow peas, trimmed
  • 1 red bell pepper, thinly sliced
  • 4 green onions, thinly sliced

Instructions

  1. Stir together sweet and sour sauce, hoisin sauce, vinegar, sesame oil, garlic powder, ginger, and, if desired, crushed red pepper in a bowl; set aside.
  2. Cut chicken into thin strips; season with salt and pepper.
  3. Cook chicken in hot oil in a large skillet over medium heat, stirring, 3 to 4 minutes or until just done.
  4. Add snow peas, bell pepper, and green onion; cook 2 minutes or until crisp tender. Add reserved sauce, stirring until heated through. Serve over rice.

  • 1½ cups long-grain rice
