Roasted Chicken Thighs with Grapes

Ingredients

  • 1 cup seedless red grapes
  • 1 small red onion, cut into thin wedges
  • 4 sprigs fresh thyme
  • 1 Tbsp olive oil
  • ½ lb boneless, skinless chicken thighs

Instructions

  1. Preheat oven to 425°F. Toss together grapes, onion, thyme, and oil on a foil-lined baking sheet; spread in a single layer. Arrange chicken over grapes; sprinkle lightly with salt and pepper.
  2. Bake 20 minutes or until chicken is done. Increase oven temperature to broil. Broil 2 to 3 minutes or until chicken is browned.

  • 2 zucchini
  • 1 tsp butter
  • 2 Tbsp olive oil
  • 1 cup sliced mushrooms
  • 1 clove garlic, minced

Side Dish Instructions

  1. Cut zucchini in half lengthwise; cut into ½-inch-thick half-moons.
  2. Melt butter with oil in a skillet over medium heat; add zucchini, mushrooms, and garlic, and sauté until just tender. Season with salt and pepper to taste.
