Roasted Chicken Thighs with Grapes
Sauteéd Zucchini and MushroomsIngredients
- 1 cup seedless red grapes
- 1 small red onion, cut into thin wedges
- 4 sprigs fresh thyme
- 1 Tbsp olive oil
- ½ lb boneless, skinless chicken thighs
Instructions
- Preheat oven to 425°F. Toss together grapes, onion, thyme, and oil on a foil-lined baking sheet; spread in a single layer. Arrange chicken over grapes; sprinkle lightly with salt and pepper.
- Bake 20 minutes or until chicken is done. Increase oven temperature to broil. Broil 2 to 3 minutes or until chicken is browned.

- 2 zucchini
- 1 tsp butter
- 2 Tbsp olive oil
- 1 cup sliced mushrooms
- 1 clove garlic, minced
Side Dish Instructions
- Cut zucchini in half lengthwise; cut into ½-inch-thick half-moons.
- Melt butter with oil in a skillet over medium heat; add zucchini, mushrooms, and garlic, and sauté until just tender. Season with salt and pepper to taste.
