Cheeseburger-Potato Tot Skillet Supper

Ingredients

  • 2 lb ground beef
  • 2 cloves garlic, minced
  • 3 Tbsp all-purpose flour
  • 1 (14.5-oz) can diced tomatoes
  • 1 cup ketchup
  • 3 Tbsp yellow mustard
  • 2 Tbsp Worcestershire sauce
  • 2 cup shredded Cheddar cheese, divided
  • 3 cups frozen potato tots

Instructions

  1. Preheat oven to 425°F. Cook beef and garlic in a 12-inch cast-iron or ovenproof skillet over medium-high heat until beef is browned and crumbly; drain and return to skillet.
  2. Stir in flour; cook 2 minutes. Stir in tomatoes, 1 cup ketchup, mustard, and Worcestershire. Sprinkle with 1 cup cheese. Top with potato tots in a single layer, covering beef mixture completely.
  3. Bake 20 minutes. Sprinkle with 1 cup cheese. Bake 5 minutes longer or until cheese is melted. Serve with additional ketchup.

  • 2 lb carrots, sliced
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Preheat oven to 425°F. Toss carrots with oil on a rimmed baking sheet. Sprinkle lightly with salt and pepper.
  2. Roast 12 to 20 minutes or until tender, stirring once.
