Cheeseburger-Potato Tot Skillet Supper
Roasted Carrots
Ingredients
- 2 lb ground beef
- 2 cloves garlic, minced
- 3 Tbsp all-purpose flour
- 1 (14.5-oz) can diced tomatoes
- 1 cup ketchup
- 3 Tbsp yellow mustard
- 2 Tbsp Worcestershire sauce
- 2 cup shredded Cheddar cheese, divided
- 3 cups frozen potato tots
Instructions
- Preheat oven to 425°F. Cook beef and garlic in a 12-inch cast-iron or ovenproof skillet over medium-high heat until beef is browned and crumbly; drain and return to skillet.
- Stir in flour; cook 2 minutes. Stir in tomatoes, 1 cup ketchup, mustard, and Worcestershire. Sprinkle with 1 cup cheese. Top with potato tots in a single layer, covering beef mixture completely.
- Bake 20 minutes. Sprinkle with 1 cup cheese. Bake 5 minutes longer or until cheese is melted. Serve with additional ketchup.

- 2 lb carrots, sliced
- 2 Tbsp olive oil
Side Dish Instructions
- Preheat oven to 425°F. Toss carrots with oil on a rimmed baking sheet. Sprinkle lightly with salt and pepper.
- Roast 12 to 20 minutes or until tender, stirring once.
