Hearty Beef Stew
Havarti Cheese Toast
Ingredients
- 2 lb boneless chuck roast, trimmed
- 1 onion, coarsely chopped
- 6 carrots, cut into 2-inch pieces
- 2 cups frozen green peas
- 1 (14.5-oz) can diced tomatoes with basil, garlic, and oregano
- 1 (14.5-oz) can low-sodium beef broth (such as Swanson)
- 1 (6-oz) can tomato paste
- 2 Tbsp Worcestershire sauce
- ¾ tsp salt
- 1 tsp pepper
Instructions
- Cut beef into 1½-inch chunks. Combine beef and remaining ingredients in a 5- to 7-quart slow cooker.
- Cover and cook on LOW 6 to 8 hours or until beef is very tender.
Side Dish Ingredients
- 3 Tbsp butter, softened
- 6 (1-oz) slices whole-grain sandwich bread
- 6 (0.7-oz) slices Havarti cheese (such as Cracker Barrel)
Side Dish Instructions
- Preheat oven to 450°F. Spread butter over both sides of bread. Place bread on a baking sheet. Top with cheese.
- Bake 8 to 10 minutes or until bread is toasted and cheese is melted.
