Hearty Beef Stew

Ingredients

  • 2 lb boneless chuck roast, trimmed
  • 1 onion, coarsely chopped
  • 6 carrots, cut into 2-inch pieces
  • 2 cups frozen green peas
  • 1 (14.5-oz) can diced tomatoes with basil, garlic, and oregano
  • 1 (14.5-oz) can low-sodium beef broth (such as Swanson)
  • 1 (6-oz) can tomato paste
  • 2 Tbsp Worcestershire sauce
  • ¾ tsp salt
  • 1 tsp pepper

Instructions

  1. Cut beef into 1½-inch chunks. Combine beef and remaining ingredients in a 5- to 7-quart slow cooker.
  2. Cover and cook on LOW 6 to 8 hours or until beef is very tender.

Side Dish Ingredients

  • 3 Tbsp butter, softened
  • 6 (1-oz) slices whole-grain sandwich bread
  • 6 (0.7-oz) slices Havarti cheese (such as Cracker Barrel) 

Side Dish Instructions

  1. Preheat oven to 450°F. Spread butter over both sides of bread. Place bread on a baking sheet. Top with cheese.
  2. Bake 8 to 10 minutes or until bread is toasted and cheese is melted.
