Potsticker and Veggie Stir-Fry
Steamed Rice
Ingredients
- 1 (24-oz) pkg frozen vegetable potstickers
- ¼ cup soy sauce
- 2 Tbsp honey
- 1 tsp ground ginger
- 1 tsp cornstarch
- 1 (16-oz) pkg whole mushrooms, sliced
- ½ onion, thinly sliced
- 2 Tbsp vegetable oil
- 2 yellow squash, chopped
- 2 zucchini, chopped
- 2 cloves garlic, minced
Instructions
- Prepare potstickers according to package directions for pan-frying. Remove from skillet, and keep warm.
- Meanwhile, stir together soy sauce, honey, ginger, and cornstarch; set aside.
- Cook mushrooms and onion in hot oil in a large nonstick skillet over medium heat 3 minutes or until just tender. Stir in squash, zucchini, and garlic; cook, stirring, 4 minutes.
- Stir in soy sauce mixture and potstickers; bring to a boil, and cook 1 minute or until sauce is slightly thickened. Serve over rice.

- 2 cups long-grain white rice
