Potsticker and Veggie Stir-Fry

Ingredients

  • 1 (24-oz) pkg frozen vegetable potstickers
  • ¼ cup soy sauce
  • 2 Tbsp honey
  • 1 tsp ground ginger
  • 1 tsp cornstarch
  • 1 (16-oz) pkg whole mushrooms, sliced
  • ½ onion, thinly sliced
  • 2 Tbsp vegetable oil
  • 2 yellow squash, chopped
  • 2 zucchini, chopped
  • 2 cloves garlic, minced

Instructions

  1. Prepare potstickers according to package directions for pan-frying. Remove from skillet, and keep warm.
  2. Meanwhile, stir together soy sauce, honey, ginger, and cornstarch; set aside.
  3. Cook mushrooms and onion in hot oil in a large nonstick skillet over medium heat 3 minutes or until just tender. Stir in squash, zucchini, and garlic; cook, stirring, 4 minutes.
  4. Stir in soy sauce mixture and potstickers; bring to a boil, and cook 1 minute or until sauce is slightly thickened. Serve over rice.

  • 2 cups long-grain white rice
