Upside-Down Turkey Shepherd's Pie

Ingredients
- ½ lb ground turkey
- ⅓ cup chopped onions
- ⅔ cup frozen peas and carrots
- ¾ cup low-sodium chicken broth
- 2 tsp cornstarch
- 2 tsp tomato paste with Italian herbs
- 1 tsp chopped fresh rosemary
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 (12-oz) pkg refrigerated mashed potatoes (such as Bob Evans)
Instructions
- Cook turkey and onions in a large skillet over medium heat 8 minutes or until turkey is browned and onion is tender. Add peas and carrots.
- Whisk together broth, cornstarch, tomato paste, rosemary, salt, and pepper; add to skillet. Cook 6 to 8 minutes or until sauce is thickened.
- Meanwhile, cook potatoes according to package directions. Divide potatoes between 2 bowls; top with turkey mixture.
