Apricot-Glazed Ham
Roasted Broccolini and Pecan Rice
Ingredients
- 3 lb fully cooked boneless ham half
- ¾ cup apricot preserves
- 3 Tbsp brown sugar
- 3 Tbsp spicy brown mustard
- ½ tsp pepper
- ¼ cup fresh orange juice
Instructions
- Make diagonal slits in ham in a diamond pattern. Place ham in a lightly greased 5- to 7-quart slow cooker.
- Combine preserves, sugar, mustard, pepper and juice. Pour over ham.
- Cover and cook on LOW 8 hours.
- Uncover; spoon preserve mixture over ham. Let stand 20 minutes. Chop 1 cup ham, and reserve for Ham and Swiss Quiche recipe.
Side Dish Ingredients
- 1½ cups long-grain rice
- 2 bunches broccolini
- 2 Tbsp olive oil
- ½ tsp salt
- ¼ tsp pepper
- 2 cloves garlic, minced
- ¾ cup pecans, toasted and chopped
Side Dish Instructions
- Preheat oven to 400°F.
- Cook rice according to package directions.
- Meanwhile, toss together broccolini, oil, salt, pepper, and garlic on a large rimmed baking sheet.
- Bake 15 minutes or until broccolini begins to brown, stirring once.
- Stir nuts into cooked rice; season to taste.
