Apricot-Glazed Ham

Roasted Broccolini and Pecan Rice

Ingredients

  • 3 lb fully cooked boneless ham half
  • ¾ cup apricot preserves
  • 3 Tbsp brown sugar
  • 3 Tbsp spicy brown mustard
  • ½ tsp pepper
  • ¼ cup fresh orange juice

Instructions

  1. Make diagonal slits in ham in a diamond pattern. Place ham in a lightly greased 5- to 7-quart slow cooker.
  2. Combine preserves, sugar, mustard, pepper and juice. Pour over ham.
  3. Cover and cook on LOW 8 hours.
  4. Uncover; spoon preserve mixture over ham. Let stand 20 minutes. Chop 1 cup ham, and reserve for Ham and Swiss Quiche recipe.

Side Dish Ingredients

  • 1½ cups long-grain rice
  • 2 bunches broccolini
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 cloves garlic, minced
  • ¾ cup pecans, toasted and chopped

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Cook rice according to package directions.
  3. Meanwhile, toss together broccolini, oil, salt, pepper, and garlic on a large rimmed baking sheet.
  4. Bake 15 minutes or until broccolini begins to brown, stirring once.
  5. Stir nuts into cooked rice; season to taste.
