Mushroom-Pepperoni French Bread Pizza

Ingredients

  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • 1 (28-oz) can whole peeled tomatoes, undrained and chopped
  • 1 (16-oz) loaf Italian bread, halved lengthwise
  • 1 green bell pepper, sliced
  • 1 (8-oz) pkg sliced mushrooms
  • 1 (2.5-oz) pkg sliced turkey pepperoni
  • 1½ cups shredded part-skim mozzarella cheese
  • ¼ cup chopped fresh basil

Instructions

  1. Preheat oven to 400°F. Sauté garlic in hot oil in a saucepan over medium heat 2 minutes or until tender. Add tomatoes; cook 10 to 15 minutes or until sauce is thickened, stirring occasionally.
  2. Bake bread 5 minutes or until toasted. Top with tomato sauce, bell pepper, mushrooms, pepperoni, and cheese.
  3. Bake 10 to 12 minutes or until cheese is melted. Sprinkle with basil. Cut into 6 serving-size pieces.

  • 2 large apples, sliced (any variety)
  • 2 cups seedless red grapes
  • 1 cup strawberries, halved

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
