Greek Beef Lettuce Wraps

Cucumbers with Lemon-Dill Vinaigrette

Ingredients

  • 2 lb lean ground beef
  • ½ tsp salt
  • ½ tsp pepper
  • 1 small red onion, thinly sliced
  • 1 pint grape tomatoes, halved
  • ½ cup pitted green olives
  • 1 Tbsp chopped fresh oregano
  • 2 Tbsp fresh lemon juice
  • 2 heads Bibb lettuce, leaves separated
  • ½ cup freshly shredded Parmesan cheese

Instructions

  1. Cook beef, salt, and pepper in a large skillet over medium-high heat 4 to 6 minutes or until browned and crumbly.
  2. Stir in onion, tomatoes, olives, oregano, and lemon juice. Cook 3 minutes or until thoroughly heated. Spoon onto lettuce leaves; sprinkle with cheese.

Side Dish Ingredients

  • 2 seedless cucumbers, sliced
  • 2 Tbsp chopped fresh dill
  • 3 Tbsp extra virgin olive oil
  • 1½ Tbsp fresh lemon juice
  • 2 tsp honey
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Place cucumbers in a large bowl. Whisk together remaining ingredients; pour over cucumbers, and toss.
